Sesame Oil Chicken
Sesame oil chicken is a really homey dish that is both delicious and easy to make. The wonderful aroma of ginger and sesame oil filling up my kitchen while cooking really make us crave all the more for this simple childhood dish of ours. It's aroma is Sooooo somewhat 'familiar' and so therapeutic.
Can also be cooked using meat instead of chicken.
This dish is often served to new mothers, during confinement month after birth. Chinese believe that
ginger and sesame oil are " HEATY" in nature and help strengthen and nourish the body of new mothers and will speed up recovery after child birth.
Ingredients:
- 2 chicken whole legs ( cut into bite size, can use whole chicken, thighs or drumsticks)
- 2 tablespoon sesame oil
- 5 slices ginger ( cut into thin strips )
- 2 eggs
Seasonings:
- 1 1/2 tablespoon soy sauce
- 1 teaspoon dark soy sauce
- 1/2 cup (125ml) hot water
Method:
- Marinate cut chicken pieces with some soya sauce.
- Heat sesame oil in wok, fry 2 eggs and set aside. Add ginger strips. Stir fry until light brown and aromatic.
- Remove half of golden brown ginger strips and set aside.
- Add chicken pieces and stir fry for a few minutes.
- Add seasonings and stir well. Cover the wok with the lid and simmer under low heat for 5 minutes until the meat becomes tender.
- Dish out onto serving dish, add the eggs on the top and garnish with the fried ginger strips. Serve hot with warm steam rice.
Optional: ( Using Chinese rice wine )
After the chicken is cooked, add a splash of Chinese rice wine. You can smell the aroma of wine evaporating after a few seconds. Garnish with the fired eggs and fried ginger strip. Serve immediately.
To cook this dish:
Leave aside after eggs are fried.
Drain and leave aside half the brown ginger.
Dish out the cooked chicken meat onto plate, topped with the eggs and garnish with the fried ginger strips.
Serve hot with steam white rice.
This is one of my hubby and daughter's favourite dish in our home. The fried egg is a MUST HAVE for us when cooking this dish. Also it's one egg each. Strictly ...... NO Sharing!!!

DeleteLove this dish since i was a little girl. Don't know why, I just love the aroma of ginger cooked with sesame oil, its the best combination.
