Spicy Pan Fried Thai Style Tofu
This is a hot and spicy tofu dish using fragrant kafir lime leave, lemongrass, lime juice and fish sauce, typical in Thai and South East Asian cuisine. This Thai spin on classic hot and spicy tofu is exquisitely Thai in taste, flavour and texture. This dish is delicious, authentic, fast and easy.
Ingredients:
- 3 pieces semi-soft white tofu (cut into 6 smaller pieces each)
- 1 cup oil (for deep frying)
- 100g minced chicken meat
- 1 shallot (chopped)
- 1 piece kafir lime leaf (shredded)
- 1 stalk lemongrass (chopped finely)
- 1 teaspoon chopped chilli padi
Seasoning:
- 3 tablespoon fish sauce
- 2 tablespoon lime juice
- 1 tablespoon sugar
- 200ml water
Method:
- Heat up oil.
- Deep fry tofu until golden brown. Drain and set aside.
- Heat up 2 tablespoon oil. Add in shallot, shredded kafir leaf, chopped lemongrass and chilli padi. Fry until fragrant.
- Add in minced meat and stir well.
- Add in seasonings and bring to a boil.
- Add in the fried beancurd, mix well and serve immediately.
Note:
When storing water packed tofu, place them in an airtight container and cover with water. Change the water daily to keep it fresh.
To cook this dish:
To cook the sauce:
First heat up the oil
Add the minced shallot
Sauté till golden brown
Add the shredded kafir leaf, chopped lemongrass and chilli padi. Fry till fragrant
Add the minced chicken. Fry till almost cooked and mixed well
Pour in the seasonings, bring to a boil. Lastly mix in the tofu.
Add the fried tofu into the boiling sauce. Mix to make sure the sauce is well absorbed into the tofu.
Dish up, garnish and serve immediately.
Altogether this is perfect - the sauce is just amazing, the spice level just right, not overpowering at all.
