Plain Pancakes ( Without Baking Powder )

This is a quick and easy pancake WITHOUT baking powder.  The pancakes are light but not as 
fluffy as no baking powder or baking soda is used.  It is definitely a more healthy version pancake.  
They are great for morning breakfast and super delicious with honey and butter.

Ingredients:

  • 200g All-purpose Flour ( sieved )
  • 400g/400ml Water
  • 60g Milk Powder
  • 20g Melted butter / Margarine
  • 100g Sugar
  • 100g/ 2  Eggs ( medium size ): Add the eggs into the water and whisk together.
  • 1/4 teaspoon Salt

Method:

  1. In a big bowl, mix together the flour, milk powder, salt and sugar.  
  2. Add the egg mixture gradually into the flour mixture, whisking*  to just a smooth batter.
  3. Mix in the melted butter.
  4. Lightly grease a shallow frying pan and heat until hot.
  5. Add enough pancake batter to thinly cover the bottom of pan.
  6. Cook for a few seconds until light brown.  Turn over and cook the other side.
  7. When cooked, place on a plate and fold.
  8. Keep warm in a 100 degree C oven if not serving immediately.
  9. Serve pancakes hot with jam or honey.  For the sweet tooth, can sprinkle castor sugar with freshly squeezed lemon juice.
*Since there is no baking powder added, we are depending on the beating process to incorporate 
 air and add fluffiness to the pancakes.

In a large bowl, stir together all the dry ingredients. Then whisk in the egg mixture gradually just until smooth.  Then fold in the melted butter .....  And thats it!


On the hot greased shallow pan, pour a ladle full of batter to thinly cover the pan


Flip over when brown on one side ...... Serve hot when done


This simple pancake is delicious even when served plain.


Although prepared without baking powder or baking soda ( hence they don't rise much )....... they are nevertheless GOOD and more importantly HEALTHY pancakes.

  1. Angie, I love pancake and thanks for sharing. Just to share with u that my late father in law (who is a 100% Baba from Malacca) used to add coconut water in d mixture, it taste a bit different from the plain version.
