Hoisin Glazed Salmon

Salmon, which is loaded with heart healthy omega - 3 fatty acids, is especially delicious when glazed with hoisin sauce, lime, soya sauce and sugar... and cooked until lightly brown.  It's also one of the few foods that is naturally rich in vitamin D, which plays a key role in maintaining strong bones.


Ingredients:

  • 2 tablespoon Hoisin sauce
  • 2 teaspoon Soya sauce
  • 1 tablespoon Lemon / lime juice or rice vinegar
  • 1-2 teaspoon Sugar
  • 1 Garlic clove ( smashed and minced )
  • 4 pieces Salmon fillets with skin-on ( 150g each )

Method:

  1. Preheat broiler to  220 degree C.
  2. Mix hoisin sauce, soya sauce, lemon juice, sugar and garlic together in a bowl.  Adjust to taste. ( add more lime if too sweet, add more sugar if too sour ).
  3. Coat the salmon fillet pieces with the marinade and chill for 1 hour.  Skin- side up when marinade and skin- side down when cook it.
  4. Set the rack in your broiler to about 6 inches underneath the heating element.  Line a baking pan with aluminium foil. Put a low rack on top of pan. Arrange the salmon pieces skin side down on the rack. Glaze with a little more of the marinade.
  5. Broil until salmon turns opaque throughout, but still pink inside, about 5 - 10 minutes, depending on the thickness of the salmon and the heat of your broiler.

Serve immediately with steamed rice.  A bowl of salad will complement well as side dish for the
salmon.
   

Marinate the salmon fillets with the skin-side up and chill for 30 minutes to 1 hour.


The marinade is so easy to mix together, the salmon gets caramelized in the oven, ........... and the best part is the dreaded "fishy" taste is totally gone!!!



It's certainly the perfect centerpiece to a healthy and absolutely delicioooooous meal.
