Spaghetti Aglio e Olio
This is a spaghetti with garlic (Aglio), olive oil (olio) and chili flakes recipe. It's an authentic Italian dish. The KEY to a good Aglio Olio is slowly toasting the garlic slices to a perfect golden brown in the olive oil. It's absolutely my family all time favourite comfort food!
Ingredients:
- 1/2 cup Extra Virgin Oil
- 5 cloves Garlic ( sliced )
- 2 tablespoon Freshly chopped parsley
- Pinch of hot pepper flakes (or more according to taste)
- 400g Spaghetti
Method:
- Fill a large pot of water, add 1 1/2 tablespoon of salt. Bring to a boil and add the spaghetti. Cook according to package instructions, about 10 minutes. Drain when "al dente". At the meantime work on the sauce.
- In a pan, add the cold oil and fresh garlic together. ( this is to make sure the garlic flavour is infuse into the olive oil as much as possible.). Turn the heat on low and cook for about 5 minutes or until the garlic is lightly brown. Then add the hot pepper flakes. Cook for about 3 minutes. Remove from the heat and set aside.
- Drain the pasta and put it back into the pot. Pour in the oil mixture,the chopped parsely and some freshly ground black pepper. Toss everything together so that the garlic oil coats every strand of the spaghetti. Place it on a serving plate and serve warm.
To cook spaghetti:
Drain when "al dente". Put the cooked spaghetti into a casserole.
At the meantime, work on the sauce:
Prepare ingredients needed for the sauce.
Then immediately add the fresh sliced garlic. Make sure the cold olive oil and fresh garlic are added TOGETHER. ( This will ensure the garlic flavour to be infused into the olive oil ).
Cook for another 3 minutes. Remove the olive oil mixture from the heat and set aside.
Pour the olive oil mixture into the hot and drained spaghetti.
Also add some chopped parsley and freshly ground black pepper.
Toss everything together so that the garlic oil coats every strand of the spaghetti.
Truly a classic Italian pasta that's done well which uses nothing but common kitchen ingredients and is so simple and quick to make.
