Ayam Goreng Berempah ( Malay Spiced Fried Chicken)

This Malay style fried chicken is simply ......... so crunchy, juicy and bursting 
with the strong flavours of many herbs and spices in it.
When frying the chicken, once all the aromatic herbs start sizzling away 
in the wok, my entire kitchen will be filled with such a nice spice aroma. 

My hubby who just came back from golf said he could smell the aroma 
even before he reaches the house when I first fry this chicken.  Certainly 
very pleased to hear him say that!


Ingredients:

6             chicken whole legs ( clean and drain well)

2 inch            lengkuas 
2 inch            ginger
1 inch            tumeric
3 cloves         garlic
3                    lemongrass
( Coarsely grind  all ingredients above )

2 tablespoon       biji ketumbar  
1 tablespoon       jintan manis
1 tablespoon       jintan putih
( Finely grind all ingredients above )

2 tablespoon        meat curry powder
1 tablespoon        sugar
1  teaspoon          salt
 2 stalks                curry leaves 


Method:
1.    Season the chicken whole legs with some table salt, sugar, curry 
       leaves and meat curry powder.

2.    Then marinate  the chicken with all grind  ingredients.  Leave for at 
       least 1 hr or preferably overnight.

3.    Deep fry the chicken on low to medium heat together with the grind 
       spices.  Do not turn the chicken until the bottom part is well cooked.
       Fry together with the spices.  To prevent the grind spices from getting 
       burnt, use a strainer to strain the spices in the oil. Continue frying till 
       chicken is cooked.  Cook in small batches. Garnish with the fried 
       spices before serving.


Leave to marinade in the fridge after all spices added

 Also garnish with the fried spices for a more elaborate spread.



Served with rice,............... or alongside Nasi Lemak for a more divine experience!


Also served with extra spicy sambal chili, for a more fulfilled appetitie.



Of course,.....it will be perfect if served with some piping hot home cooked Nasi Lemak 
made from Brasmati rice.
