Salted Egg Steamed Tofu

Tofu is a somewhat divisive food. You either love it or dislike it.  I believe the reason some people dislike tofu isn't really a matter of taste, but one of texture. Also it's known that tofu is only as flavorful as what it's served with. This may be true to an extent.  However the cooking method used to prepare the tofu has just as much an impact.
There are many ways to cook tofu. Here, I have chosen to steam tofu. Steaming is one of simplest way to prepare tofu.  Instead of chewy, the tofu becomes " pillowy" , especially when steam until just cooked through. So enjoy!

Ingredients:
  • 2 salted egg yolks
  • 1 block soft white tofu
  • 1 egg, lightly beaten
  • 1 tablespoon vegetable oil
  • 1 clove garlic, chopped
  • 200g minced meat ( pork or chicken )

Seasonings: (egg mixture)
  • 1/4 teaspoon salt
  • 1/2 tablespoon cornflour
  • 1/4 teaspoon sesame oil
  • 1/2 cup (150) water
  • Dash of pepper 

Seasonings: (topping for tofu)
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon light Soy sauce
  • 1/2 teaspoon sugar
  • Dash of pepper

Garnish:
  • Some chopped spring onion
  • Some fried shallots

Method:
  1. Steam salted egg yolks until cooked. Mash it while it's hot.
  2. Next prepare the egg mixture. Mix egg with water in a measuring cup. Then add in salt, sesame oil, cornflour and dash of pepper. Next add in the mashed salted egg yolk. Mix well.
  3. Heat up a wok with water to prepare to steam the tofu.
  4. At the meantime place the soft tofu onto a steaming plate. Pour the egg mixture over it.
  5. Steam using high heat until cooked, abt 8 minutes.
  6. Then prepare the tofu topping. Heat up oil separately, sauté chopped garlic until fragrant. Add in minced meat, stir fry until aromatic. Then add some oyster sauce, soy sauce, sugar and pepper. Mix well.
  7. Spoon the cooked meat over the steamed tofu. Garnish with chopped spring onion and fried shallots. Serve hot with rice.


To prepare ingredients for the steamed tofu:
First remove 2 egg yolks from 2 salted eggs.

Steam the egg yolks until cooked.

Mash the cooked egg yolks in a bowl while still hot.


Mince some meat (chicken or pork).

To prepare egg mixture:
Prepare ingredients for the egg mixture: 1 egg, salt, cornflour, sesame oil, pepper, water and the mashed egg yolks.

Add beaten egg into a measuring cup filled with 1/2 cup water. Mix in the seasonings. Next add the mashed salted egg yolks.

Stir everything together. Mix well.


                         Prepare the steamer to steam the tofu. Heat up water in a wok until boiling.


While waiting for steamer to be ready, place a block of soft tofu onto a steaming plate.


Pour the egg mixture over the tofu.


Place the plate of tofu with egg mixture in the steamer. 


Steam using high heat until tofu and egg mixture is cooked, about 8 minutes. Do check for doneness when about cooked.


To prepare the meat topping:
While the tofu is in the steamer, prepare the ingredients for the toppings.


Heat up oil in a wok. Sauté chopped garlic until fragrant. 


Add in minced meat. Stir fry until aromatic.  


Add the seasonings: oyster sauce, soy sauce, sugar and dash of pepper. Stir fry and mix well.


Spoon the cooked meat over the steamed tofu. Garnish with chopped spring onions and fried shallots before serving.


It's best to serve the tofu immediately while still hot with steamed rice.
